Late Summer Guacamole

1. Finely mince up 2 of Olivia's fresh local organic serrano chillies that she picked at 10pm on Saturday night by iphone light.

2. Mash up one clove of fresh garlic from Steve's farm

3. Mince up 1/2 red onion from same farm

4. Chop and mix the above together with some good salt. Squeeze in one or two limes. Add a little olive oil and stir.

5. Core and chop up several almost too ripe red heriloom tomotoes from the Sunday farmer's market. Mix in with the above.

6. Finely chop some cilantro from the Steve's Farm and mix in.

7. Open, Core and Cube several local avocados picked up at FnC. Gently mix in, not mashing.

8. Serve with favorite chips. Ours our 'Have a Corn Chip' made in Laguna Beach.

Pan Roasted Open Faced Grilled Cheese with Sun Dried Tomatoes, Avocado and Chiptole Lime Salt

5 out of the 6 ingredients came direct from Steve and Olivia at Farmer and the Cook

1. Heat an indulgent amount of olive oil in non-stick or other favorite grilled cheese making pan
2. Slice up some of Olivia's fresh spelt seed bread 
3. Place slices in oil and allow to "toast"
4. Meanwhile, grate up some yummy sharp cheddar cheese.  You could get this at FnC, but I had some from Vermont in my fridge.
5. Turn slices of bread over, sprinkle with cheese and cover to allow cheese to melt.
6. When cheese is melted, remove to a plate.  Put 2 or more of olivia's amazing smoked sun dried tomatoes on top.  Slice up some avocado and place on each sandwich.  Sprinkle with Olivia's amazing chipolte Lime sea salt.  Eat with a fork and knife for tidiness or not.

Spinich Salad

I was reluctant to bring a salad to Thanksgiving.  Who has room for salad on Thanksgiving?  Why would you have salad when there's stuffing?  But I love Babs and will do whatever she says.  I made this from what I had in my fridge mostly from our local farmers.

1. Wash a bunch of Steve's amazing spinach
2. Mash up some garlic with some salt.  Add some of Alice's Ojai White Balsamic Vinegar.  Add some chopped green peppercorns and chopped mint from Steve and chopped parsley from BD.
3. Thinly slice at least 2 bulbs of fennel and a bunch of B.D.'s tiny scallion chive onions.  Mix and squeeze a meyer lemon from Friend's Ranch over them.
4. Toast pine nuts.
5.  When ready to serve, toss spinach with fennel mixture and dressing.  Crumble Feta on top. Heat olive oil in small pan on stove.  When hot, pour over salad to wilt.  Toss quickly.  Sprinkle in Pine nuts and add 3 cubed avocados.  Gently toss.  Salt to taste and serve.

In Anticipation of Summer Cold Pasta

This pasta is best in the late summer when the tomatoes and cucumbers are unbelievable. But we swung by Farmer and the Cook tonight after a long hike and the produce, as always looked great, so we decided to give it a try.

Start a pot of water boiling for the pasta.
Start preparing below. Once water boils, add some salt and the pasta.
(Tonight we used Bionaturae's Organic Fusili)

As you prepare below, add to a wide deep bowl.
  1. Mince 2 cloves of garlic and mash with some good salt
  2. Thinly quarter 1/2 a red onion
  3. Chop about a pound of the best tomato's you can find.
  4. Thinly slice and then mince between 5 and 8 marinated sun dried tomatoes.
  5. Add too much good quality olive oil and stir the mixture.
  6. Peal and half and slice 2 cucumbers into half moon shapes.
  7. Finely grate zest of 2 lemons into bowl. Then slice and squeeze the juice, being aware of keeping the seeds from getting into the bowl.
  8. Add a shy 2 tbl. of drained capers.
  9. Add about 1/2 cup of pitted halved kalamata olives.
  10. If I had had fresh herbs like Tarragon or Basil, I would have used them. But instead, I used some dried Mexican Oregano and Red Pepper flakes.
  11. Open and remove pits of 3 avocados. Keep avocado in skin and Using Sharp knife, slice in two directions to get 1/4 inch pieces. Reserve and do not add to bowl.
Stir the above and add too much salt and ground pepper.

12. Once pasta is done, drain and run cool water over it, stirring to bring temperature down evenly.

13. Add pasta to mixture and stir. Use spoon to scoop out avocados and gently add to pasta mixture.

Endive, Fennel, Blood Orange and Avocado Salad

Uschi was my wingman on this one.

These proportions serve 20.

Use knife to slice all skin and white parts off the blood oranges. Squeeze juice out of the slices and reserve. Slice oranges into shy 1/4 rounds.
Slice 10 Endive diagonally. Toss with a few good squeezes of lemon.
Thinly slice 5 bulbs of fennel. Toss with juice of a lemon.
Open and pit 4 ripe avocados.

There are many ways you could assemble this salad. Last night we had a big round platter, so we arranged the ingredients on top of each other in circles.

Put endive down first and over the entire platter.
Layer Fennel on top but closer to the center so you can see the endive on the outside.
Layer blood oranges on top, but closer to the center.
Using sharp knife, slice avocados in radiating pattern while still in skin and use big spoon to scoop out. Fan avocado around the edges of the blood orange circle.

Mix the reserve blood orange dressing with finely diced red onion, a little maple syrup, salt and pepper to taste, and Ojai Olive Oil. Pour the dressing around the platter over the endive, fennel and avocados.

I wanted to put fresh mint on the salad, but could not find it in my packed fridge. So we used fresh rosemary and it worked great.
